Zucchini Boats

These are so pretty when plated up. Lots of colors and lots of healthy ingredients. Our filling mixture is yogurt based with lots of veggies. A cool lunch recipe on a hot summer day.

Ingredients:

  • 4 large zucchini squash
  • 1/4 of a chicken breast
  • 2 bananas
  • 1/4 cup whole wheat pasta
  • 1 cup chicken stock (low sodium)
  • 1/8 red bell pepper chopped in to small pieces
  • 1/8 green bell pepper chopped small
  • 1 clove garlic chopped small
  • 2 tbls plain non fat yogurt
  • 2 tbls light mayo
  • 1 chopped green onion
  • 1 sliced carrot
  • 2 broccoli flowers

Preparation:

  • Heat chicken stock in pot
  • Add pasta when chicken stock boils and reduce heat.
  • Cook pasta 5 mins only
  • Remove pasta and rinse in cold water
  • Add rinsed pasta to mixing bowl and set aside
  • Add 1/4 cup water to pot and heat
  • Add chopped bell peppers and chopped garlic to boiling water.
  • Turn down heat to med flame and cook for 3 mins.
  • Drain and rinse with cold water and set aside
  • In mixing bowl that should now have your cooked pasta, add the following ingredients to it:
  • yogurt, mayo, celery and green onion.
  • Stir well and place in fridge until needed
  • Spray a frying pan with cooking spray
  • Add broccoli, carrots and snow peas
  • Cook on med heat for 3 mins max. Do not let them get soft or burn
  • Separate broccoli from carrots and peas
  • Cut up cooked broccoli and add to mixture in fridge
  • Separate carrots from peas and set aside
  • In frying pan or pot, add 2 tbls water
  • Heat on med flame and add chicken
  • Cook until chicken is no longer pink
  • Remove chicken and set aside to cool
  • Slice zucchini in half lengthwise
  • In frying pan add 1/4 cup water and heat
  • Add zucchini cut side down in to water.
  • Cover and cook 5 mins
  • Remove zucchini and place on working table to cool
  • When zucchini is cool, remove your mixture from fridge
  • Add chicken (cut it in to small pieces or tear it)
  • Add bell peppers and garlic to mixture
  • Stir well
  • Using a spoon, remove meat of zucchini from each half and place the removed zucchini meat in to the mixture
  • Stir well
  • Stuff yoru zucchini boats with a spoon
  • Place sliced carrots on top of each half
  • Take your snow peas and make a fan like design with them on the plate next to the zucchini boats
