The Weekend Breakfast Special!

So I’m back after last week’s craziness, and have a breakfast special to share with you… Lazy Saturday and Sunday breakfast in preparation for some Geneva sunshine!

First up is the simple but heavenly  smoked salmon scrambled eggs. ( You only need eggs, smoked salmon, chives, butter, bread)

Whip up some eggs with a bit of salt and pepper, and throw in pan with some melted butter. Let the eggs cook away, stirring every so often to give it a light fluffy texture. Just before it’s cooked through, throw in some roughly chopped chives and some pieces of smoked salmon. Let it cook for a few moments and leave to rest for a few minutes before serving on a steaming hot piece of toast with lashings more butter. As that Meerkat says “simples”.

Next up is the classic “French toast”. No idea what’s French about it, but ask me later and I will have found out… (Only need eggs, bread, spring onions, mushrooms and butter)

Cut up some slices of thick soft bread and drop into a bowl with a couple of whisked eggs, salt, pepper and a splash of milk – leave the bread for a while to soak up the egg.
Meanwhile, chop up some mushrooms and spring onions and throw in a separate frying pan with a bit of olive oil. Let those sweat down and leave them while you deal with the French toast.
Into a hot pan, Drizzle a little olive oil and place the pieces of bread, turning until they are brown on both sides and cooked through.
Place the toast on the plate and lay the mushroom combo over the top. Hey presto – Sarah fed and now it’s time to pop off to the market for tonight’s adventure… Wild mushroom ravioli*.

*all assuming the pasta machine still works after its last outing…
