Spinach Ravioli with Tomato Sauce, Bacon and Almonds

This dish is one of my absolute favorites. So easy to make. So delicious. And the almonds just give it that little extra crunch that I love.

It requires very little prep time, but the sauce gets more intense, if you leave it on low heat for a few hours. Lats night, when I made this, I prepped the sauce for a few minutes, and just let it simmer for two and a half hours.

Ingredients

  • 1 T olive oil
  • 1 onion, chopped
  • 1 can of chopped tomatoes
  • 3 T red wine vinegar
  • 1 T brown sugar
  • 1 clove garlic, minced
  • 10 cherry tomatoes, chopped
  • A handful of fresh basil
  • Salt and pepper to taste
  • 1 cup chopped up bacon
  • 1 cup spinach ravioli
  • 1 yellow pepper, chopped
  • 1/2 cup mushrooms, chopped
  • A handful of almonds, chopped

Instructions

  • Heat olive oil in a skillet over medium heat. Add onion and cook for a few minutes.
  • Add the can of tomatoes, red wine vinegar, brown sugar, garlic, cherry tomatoes and basil. Add salt and pepper to taste and cook on low heat for two hours.
  • In a heated skillet, add bacon and cook for a few minutes, untill it gets crispy.
  • In a pan with boiling water and a pinch of salt, add spinach ravioli and cook for three minutes. Drain.
  • Add the yellow pepper and mushrooms to the tomato sauce.
  • Place ravioli on a pasta plate, pour over tomato sauce, bacon and almonds. Serve and enjoy.
