Peanut Butter Banana Mini Donuts with Chocolate Ganache (Gluten Free and Vegan)

Last year for my birthday, Alex asked me if I wanted her to bake me anything. Without hesitation, I asked for her delicious mini donuts. These donuts are my favorite thing she bakes and after you try this recipe, you will understand why! An added benefit to these donuts is that they are gluten free and vegan.

Print Peanut Butter Banana Mini Donuts with Chocolate Ganache (Gluten Free) Author: Alex Recipe type: Donuts/Gluten Free Prep time:  15 mins Cook time:  10 mins Total time:  25 mins Serves: 24   Mini gluten free donuts packed with chocolate, peanut butter, and banana flavour, and topped with rich chocolate ganache. Ingredients For donuts:

  • 3 very ripe bananas
  • 1 heaping tbsp peanut butter
  • 2 eggs
  • 1½ tsp vanilla
  • ½ cup semisweet chocolate chips
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 3 tbsp coconut flour

For the ganache:

  • 1 tbsp coconut oil
  • ½ cup semisweet chocolate chips

Making the donuts:

  • In the food processor, mix bananas and peanut butter together.
  • Add eggs and vanilla and mix to combine.
  • Next add chocolate chips and use the pulse option on the food processor for a few seconds.
  • Add baking powder and baking soda, and again pulse mixture for a few seconds.
  • Add coconut flour and mix to fully combine.
  • Next cook the donuts according to mini donut maker instructions. We use a Baby Cake mini donut maker.
  • After removing cooked donuts from your mini donut maker, allow them to cool before dipping in ganache.

  • Melt together coconut oil and chocolate chips over medium heat.
  • Once melted, dip the tops of the donuts in the ganache and then sprinkle with sea salt.
  • Place the donuts in the fridge for 10-15 mins to let the ganache set.

Notes 1. After adding the coconut flour to the donut mixture, ensure the dough is cooked quickly as the coconut flour will thicken the longer it sits.
2. Almond butter can be substituted in this recipe for peanut butter.
