Oatmeal Pancakes

Pancakes that can also be used as whole grain bread for your sandwiches! These are made with Whole Grain Oatmeal, Whole Wheat Flour, Low Fat Buttermilk and Peach Juice.

Ingredients:

  • Canola cooking spray
  • 1 cup whole wheat flour
  • 1 cup 100% whole grain (old fashioned oats)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1+1/2 cups of low fat buttermilk
  • 1 tbls no sugar added peach, pineapple or apple juice
  • 1 tsp. vanilla
  • 4 egg whites

Preparation:

  • In a med. sized mixing bowl add all ingredients
  • Using a large spoon or wisp untensil, mix very well (full 2 mins)
  • Spray a griddle or large frying pan with canola cooking spray
  • When pan/griddle is hot, add 1 large spoonful of mixture
  • Let cook on med heat until brown and pancake rises in thickness
  • Flip over and cook to brown on other side.
  • Spray frying pan with cooking spray each time before you add new batter
  • When finished, put pancakes on plate
  • Using a non calorie, no fat spray butter, spray tops of pancakes
  • Cover with sugarless pancake syrup or your favorite fresh fruit
  • Makes 8 pancakes
