Oatmeal Fruit Cookies

These cookies are made using oatmeal, dried fruit, sugar free fruit preserves, non sugared cocoa powder and other healthy ingredients. I sprinkled a mixture of cinnamon and sugar on top but this is optional. They would also be great with a little powdered sugar topping.

Ingredients:

  • 3/4 cup of whole grain oatmeal quick oats
  • 1 tbls non sugared cocoa powder
  • 1 tbls dried cranberries
  • 1 tbls dried dates
  • 1 ripe banana
  • 1.5 tbls skim or low fat milk
  • 1 tbls sugar free fruit preserves
  • 2 tbls chopped walnuts
  • This mixture makes 14 cookies. Double or Triple if you would like

Preparation:

  • Add all ingredients to a med. sized mixing bowl
  • Mash ingredients together using a potato mashing utensil
  • Form balls using approx 1 tbls mixture or more for larger cookies
  • Drop balls of mix on to a cooking sheet that has been sprayed with no stick cooking spray
  • Flaten cookies slightly by pressing down on tops with fingers or a spoon
  • Cook in a preheated 375 degree oven for 10-12 mins.
  • When done and still warm, sprinkle the tops of the cookies with cinnamon sugar mixture (optional) (Powdered sugar will work also)
  • Cookies will be chewey
