Mexican eggs is another great example of an easy scrambled
egg dish which only needs tomatoes, onions and eggs as its main ingredients ,
and even though the ingredients and method used are quiet simple, it doesn’t
lack a bit in taste.
Simple and convenient
Cooking this simple Mexican eggs dish primarily involves,
preparing onion tomato paste upon which whipped eggs are poured and everything
is scrambled together (learn the complete recipe below) making this such a
convenient dish that you can make it at any time during the day
However if chopping vegetables is your problem, then it’s
always a good idea to ask for someone’s help, or if you have a little extra on
you, then get yourself a small chopper. In fact it’s on my “to buy list” too,
it should make chopping a lot more bearable.
For the ingredients
- 4 Tbsp. refined oil /butter, margarine
- 1 large jalapeno or even a regular chilli will do, finely chopped and cleared
of its seeds
- 1 large onion finely chopped
- 1 large tomato finely chopped
- 4 large eggs
- Salt to taste
In 4 table spoons of refined oil saute onions and jalapeno till
onions turn golden brown.
Right after add tomatoes and some salt to it, and saute till tomatoes turn to paste
Note: use low – med heat and all, times.
Beat 4 eggs in a bowl and pour it on the onion tomato paste
and mix well
Keep mixing on low flame and turn off flame when small
chunks begin to form.
Cook in the heat of the pan till every things turns into
tender chunks like this
Garnish with fresh finely chopped coriander leaves and butter.
This dish is best to have with corn tortillas, chapattis, or toast.
