“Delicious Egg Curry With Coconut,Now Made Easy”

This egg curry with coconut is a kind of dish in which, if
you invest some time and effort, like say an hour or so, it will repay you a hundred
folds in its delicious flavour

Actually it’s all due to its primary ingredients (eggs and
coconut milk) which are packed with all the healthy goodness and flavour you
can imagine of.

This dish is truly worthy of being on the menu of a classy
restaurant and I feel fortunate enough to know its recipe and if you want, I can show it to you
too,

in a simple way, and with easy to get ingredients

All about its taste

The rich, creamy and slightly sweet flavored coconut curry,
along with fried boiled eggs, just took me by surprise, because even after the use of whole spices, the taste of coconut
milk was so prominent that the spices gave their flavor but didn’t sting my
tongue a bit.

This kind of consistency is great for me, because I like the flavor of spices but can’t tolerate their spiciness, and if you’ve got similar
taste, I bet you’ll love it too.

So if you too love eggs and enjoy the taste of
coconuts just as much, this egg curry with coconut is for you. Try it at least once,
believe me you want regret it

 

Things you’ll need

(serves two)

 

  • 1 clove of garlic,
  • 4 cloves, 4 cardamoms, 2 cinnamon sticks
  • 2 medium onions
  • 1 tsp. ginger paste
  • 2 cups coconut milk
  • 4 eggs hard boiled
  • 2 large green chillies(split
    in half lengthwise)
  • 3 stems of curry leafs
  • some cooking oil
  • ½ tsp. turmeric
    powder
  • ½ tsp. red chilli
    powder
  • salt to taste

 

Method

 

Deep fry the boiled eggs till they turn golden brown, and cut
them into halves as shows below

Now heat 3 tbsp. oil in a pan and fry the whole spices
(cloves, cinnamon, and cardamom) on medium heat for 2-3 seconds

Add the minced onions right after and fry them till they
turn golden brown

Now add the finely chopped garlic and ginger paste to the
pan and fry till they too turn golden brown

Add the curry leaves and green chillies and fry them a
little, then add the spices (chilli, turmeric) right after and mix well

Finally add the coconut milk to the pan and boil this for 10 -20
min, till its volume reduces and it becomes thick and creamy in consistency as
seen below

Add salt now, according to your taste

 

To finish, place the fried boiled eggs we prepared earlier in
this curry like this

That’s it! Serve hot with some chapattis or plain boiled rice,
bread will also do. Enjoy
