“Curried Egg Salad, Easy To MakeYet Exclusive On Taste”
I could literally live off salads, if only they tasted like this curried egg salad, but unfortunately not all salads can be made this rich and many of them are actually intended to fill the stomach with minimum calories.
So even though this curried salad is not an everyday salad. But it can definitely be made when you want a salad, which is deliciously out of the ordinary. And believe me this one will really blow you off your feet 😉
To make this Curried salad we will need to make curried mayonnaise first, and for that we need curry powder. Now you can buy Curry powder in a general store, but if you want you can even make it at home with some ordinary spices. These are the powdered spices you will need
Curry Powder recipe
- Half a teaspoon of Coriander powder
- Cumin powder, Cardamom powder
- Mustard powder, Pepper powder
powder and Red chilli powder each
- And one teaspoon of turmeric powder.
All you need to do now is just mix these powders in the quantities mentioned above, and you have your home-made curry powder ready to be used. Make sure to store it in an airtight container.
Curried mayonnaise recipe
With our very essential curry powder at hand, we are ready to mix it our regular mayonnaise and convert it into curry mayonnaise. To do this, take out a cup full of mayo in a bowl and add around 3 teaspoons of this Curry powder to it and mix it well with a spatula.
Now Taste and see if you like it, add a little more if you want but only a little at a time. You don’t want to over spice things.
Note: see if you can get a hold of some low fat mayo to take off some calories. Infact if you want you can even learn to make mayonnaise here.
And now with our curried mayonnaise prepared we are almost ready to make a curried egg salad. Just make sure you have these few other things.
Curried egg salad recipe
- Three boiled eggs.
- Finely shredded cabbage.
- A large Medium chopped fresh cucumber.
- Curried mayonnaise.
Note: feel free to add in your favourite salad toppings, I’m just using whatever I have at home.
Take the boiled eggs in a bowl and mash them up with a folk as shown below.
Now mix the mashed eggs, chopped cucumbers, shredded cabbage and the curried mayonnaise together. Ideally 3 to 4 table spoons of mayo should be sufficient, but add more if you like.
Finally take out this now ready curried egg salad in a serving bowl and serve fresh. I love to have mine with whole wheat toasted bread and a thick soup, but you can even have it like a salad with a main course dish. Enjoy!
