Chicken Enchiladas Meatloaf


This is one of the best tasting meatloafs ever. It is spicy and so flavorful. I am sure it will become a favorite to many. Not only is it so much healthier than a traditional meatloaf, it is so easy to make and perfect if you are on a budget. A meat loaf your whole family will love!


  • 4 boneless, skinless chicken thighs
  • 1 tbls chili powder
  • 1 tsp paprika
  • 1 tsp no salt garlic & herb seasoning (I use McCormick’s brand
  • 1 tsp crushed red pepper flakes
  • 1/2 cup chopped onion
  • 3 tbs salsa of your choice plus more to top when serving
  • 2 tsp Tapatio sauce


  • Preheat oven to 350 degrees
  • In food processor, grind your raw chicken in to consistency of ground beef
  • In a large mixing bowl add all ingredients
  • Mix well, smashing down and stiring to mix ground chicken in well
  • Spray a loaf pan with cooking spray on bottom and sides
  • Add mixture to loaf pan pressing down to form a tight and well packed loaf
  • Cook in oven at 350 degrees for 40 mins
