Carrot Cake

A sugar free cake with sugar free frosting. You can also warm a slice and eat the cake for breakfast since it is filled with nutritious ingredients! Great with coffee in the morning. The cake recipe is vegan but the icing is not.

Ingredients:

  • 2 cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 and 1/4 cups water
  • 1/2 cup dates
  • 1 (2 oz package of chopped walnuts)
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 cup grated carrots
  • 1/4 cup orange juice concentrate (from a thawed can of frozen concentrated oj) Do not mix with water

Prepartion:

  • Preheat oven to 375 degrees
  • Mix flower, baking powder and baking soda
  • Set this dry mixture aside
  • In a cooking pan add the following:(water, dates, cinnamon, ginger and nutmet)
  • Bring to a boil then turn heat to low and simmer for 5 mins
  • Place carrots in a large mixing bowl
  • Pour the hot date and spices mixture over carrots
  • Set in refridgerator until cool
  • When mixture is cool, remove from fridge
  • Add walnuts
  • Add orange juice
  • Add dry ingredients
  • Mix with a spoon
  • Spray a bundt or other cake pan with cooking spray
  • Pour in mixture
  • Bake in oven for 45 mins
  • When cake is done and cooled, take a butter knife and go around the edges loosening cake from pan
  • Take a dinner plate and place it on top of the pan that the cake is inHolding the plate in place, turn your cake over so cake drops on to plate

Icing Ingredients

  • 2 oz of fat free cream cheese
  • 1/2 cup sugar free whipped topping
  • 3 tbls sugar free mayple pancake syrup
  • 1 tbls lemon juice
  • Stir well and beat until all cream cheese is creamy and no lumbs. Use food processor if you would like
