Beef Roll Ups

I used thin sliced lean beef for this elegant and spicy dish. Beef is used to wrap fresh green beans and baked along side cauliflower and tomato slices. Plated on a bed of cooked collard greens and served with a spicy sour cream / horseradish sauce for dipping.


  • 5 large thinly sliced lean beef slices
  • 25 fresh green beans (whole)
  • 1/4 cup water
  • 5 large collard green leaves
  • 1 large tomato
  • 1/2 tsp black pepper
  • small pinch sea salt


  • Place 1/4 cup water in a square baking dish (med. sized dish)
  • Line baking dish with large collard green leaves, snapping off any stems that may hang over
  • Take 1 slice of beef and lay 5 green beans in to the center of it
  • Roll beef up around the green beans
  • Place rolled beef in to baking dish on top of collard greens
  • Do this with all your beef slices
  • Break your cauliflower head in to nice sized bunches
  • Lay cauliflower bunches around beef in baking dish
  • Slice your tomato in to med thickness slices and place on top
  • Cover baking dish with tin foil and bake in 350 degee preheated over for 50 to 60 mins. (check beef for doneness at 50 mins)
