Apples & Cheddar Cheese Stuffed Chicken Breasts with Healthy Gravy and Warm Carrot Salad

This is a wonderful healthy stuffed chicken breast recipe with a hint of fall. The chicken breasts are filled with fresh chopped apples and fat free cheddar cheese then rolled and topped with a thick brown gravy that is just as healthy as the meal itself. I have also made a delicious shredded carrots, apple juice sauced side topped with sweet raisins.

Ingredients for stuffed chicken breasts:

  • 1 tbls olive oil
  • 2 thick boneless, skinless chicken breasts (slice each breast length wise through the thickness making each breast in to 2 thinner flat pieces. See video
  • 2 large or 3 small red apples (cut in to 1 inch cubes)
  • 1/4 cup to 1/2 cup fat free shredded cheddar cheese
  • 1/4 cup Italian bread crumbs
  • 1/4 cup white cooking wine
  • 1/4 cup water
  • 1/4 cup water to mix with corn starch
  • 1/2 cup chicken broth
  • 1 tbls corn starch

Preparation for Stuffed Chicken and Gravy:

  • After you have sliced your chicken breasts in to thin fillets,lay them on to a piece of waxed paper or tin foil
  • Mix apple cubes, cheddar cheese and bread crumbs in a bowl
  • Lay a handful of apple mixture on to each fillet top
  • Fold chicken fillets over apple mixture making filled pockets and secure with toothpicks
  • In a skillet add olive oil and heat on medium heat
  • When oil is hot, carefull lay stuffed chicken fillets in to skillet
  • Brown first side for 4 mins on medium heat then flip using a fork and spatula and brown on other side for 4 mins.
  • Add white wine and water to skillet
  • Cover and cook fillets for approx 12 mins on each side adding a little water if necessary after the first 12 mins.
  • Remove fillets and place on to a plate
  • In the same skillet add chicken broth and using a spatula stir and scrap bottom of skillet to loosen any browned liquid (which you will want to keep in gravy) and stir well.
  • In a small cup add 1/4 cup cold water
  • Add 1 tbls corn starch to water and mix completely leaving no lumps
  • Pour corn starch mix in to gravy and stir constantly until thickened
  • When serving place 1 chicken fillet on to plate and top with gravy

Ingredients for Carrot Apple Juice Side Dish:

  • 6 medium sized carrots
  • 1/2 cup no added sugar apple juice
  • 1 tsp Agave sweetner (Agave is found in your honey or syrup isle) (You can use brown sugar if you would prefer)
  • 1 small handful of raisins

Preparation for Carrot Salad:

  • Shred 6 medium sized carrots
  • In a pot add shredded carrots
  • Turn fire on to medium flame
  • Add apple juice
  • Add Agave
  • Add raisins
  • Stir and cook on low heat until carrots are tender
